Hi there on Friday evening in a cold and wet Adelaide.
It has been overcast all day and the rain set in early afternoon, but there is no wind and it is soft refreshing rain. Which reminds me of the hymn -
We plough the fields and scatter:
We plough the fields, and scatter
The good seed on the land,
But it is fed and watered
By God's almighty hand;
He sends the snow in winter,
The warmth to swell the grain,
The breezes, and the sunshine,
And soft refreshing rain.
All good gifts around us
Are sent from heaven above,
Then thank the Lord, O thank the Lord,
For all his love!
The good seed on the land,
But it is fed and watered
By God's almighty hand;
He sends the snow in winter,
The warmth to swell the grain,
The breezes, and the sunshine,
And soft refreshing rain.
All good gifts around us
Are sent from heaven above,
Then thank the Lord, O thank the Lord,
For all his love!
We really do have so much to be thankful for that it makes my heart sing.
I have a rather nice recipe to share with you today.
Bacon and Chive Tarts
Preparation Time
15 minutes
Cooking Time
20 minutes
Makes
12
Ingredients
- spray oil
- 1 long rasher bacon, finely chopped
- 2 eggs
- 1/4 cup (60ml) cream
- salt and pepper
- 1 tablespoon chopped chives
- 2 sheets ready rolled short crust pastry, thawed
Method
- Preheat oven to 170°C. Spray a non-stick frying pan with a little oil. Add bacon and cook for 4-5 minutes over medium heat until golden. Remove and drain on paper towel.
- Place eggs, cream, salt, pepper and chives in a bowl, and whisk until combined. Using a 7cm biscuit cutter, cut out 12 rounds from pastry sheets. Press each round into a lightly greased mini tart pan. Sprinkle some bacon into each pastry case and pour in about 1 1/2 tablespoons of egg mixture, taking care not to overfill. Bake for 15 minutes or until cooked through and golden. Serve warm or cold.
Notes
- If you prefer, omit the bacon and substitute with 1/4 cup grated tasty cheese.
The way the moon pulls on the tide and I am inspired by the way some people can put words together and then place them to music. A favourite of mine is
The Dimming of the Day
This old house is falling down around my ears
I'm drowning in a river of my tears
When all my will is gone you hold me sway
I need you at the dimming of the day
You pull me like the moon pulls on the tide
You know just where I keep my better side
What days have come to keep us far apart
A broken promise or a broken heart
Now all the bonnie birds have wheeled away
I need you at the dimming of the day
Come the night you're only what I want
Come the night you could be my confident
I see you on the street in company
Why don't you come and ease your mind with me
I'm living for the night we steal away
I need you at the dimming of the day
I need you at the dimming of the day.

Listen to it on this YouTube clip and enjoy.
I think it is beautiful but perhaps I am indulging myself in a little melancholy but beautiful lyrics and music often bring me to tears.
It's the weekend again and I wish for you all safety and peace, love and laughter, family and friends. Whatever you do, wherever you are my thoughts and care is with you all.
Goodnight from Australia and me.
Love and hugs,
"Tears are words the heart cannot express."
