Welcome to Sunday - a day when families try to get together and spend time and do things.  Hope it works out for you - and for those who can't be together a phone call works well and is lovely.

Inspiration comes today from the joy of being alive and living in freedom.

I watched some football yesterday and the guys were exhausted after the game (which was a draw) and they will have to go back next week and do it again - what inspiration to play like that and get beaten around and then go back and do it.  Either inspiration or stupidity.

My indulgence today came in the form of coffee in bed with some pages of my book.  Listening to the birds waking outside and wondering what today will hold for me.  I also had a nice breakfast and am ready to face the world.

Summer is on the way for us but for those in the northern hemisphere winter days are looming on their horizon and I came across this quick and easy soup for winter and share it with you.


ZUCCHINI AND LEEK SOUP


30 gms butter
2 leeks thinly sliced
500 gms zucchini thinly sliced
1 onion
5 cups chicken stock
Salt and freshly ground black pepper
½ cup cream
Chives to garnish


Heat butter in large saucepan, add zucchini and onion and gently cook 5 mins.
Add stock, salt and pepper and bring to boil.
Simmer covered for 10 mins.
Cool slightly
Place half of zucchini mixture into food processor until smooth.
Add pureed mixture to cream
Reheat gently
Garnish.

Now there's a challenge for you to do the conversions - good luck with that.  There are lots of conversion tables on line - just google it.
