Good Morning - another week to be lived and enjoyed.  Life is good - beautiful day, blue sky, no wind and glorious sunshine - but very cool and crisp.

A Christmas group I belong to often shares recipes and this is one which came in this morning from Kathy - it sounds great to me and one I am going to try for sure.


Peppermint Christmas Roll 

Ingredients
* 1 packet chocolate ripple biscuits
* 1x 250 gram block Cadbury dairy milk peppermint chocolate
* 1 cup glace cherries
* 2 ozs melted butter
* 1/2 can sweetened condensed milk
* coconut

Method

Crush biscuits, chop chocolate and cherries into small pieces. Add butter,
condensed milk and enough coconut to make workable dough. Roll into balls or
log shapes and then coat with coconut and refrigerate on foil tray. Slice or
eat as desired- enjoy

I have been feeding my neighbour's fish while they are away on holiday and I am sure it was pleased to see me this morning - what a life being a fish - just swimming around all day - not sure I could deal with that I have enough wrinkles without getting watery wrinkles as well. They are home today so poor little fish will be shocked by the noise of the family home after such quiet days.  I am aware that watching fish is supposed to be calming and I can believe that - this little chap is so peaceful.

The beauty of the morning and this little fish inspired me today and I am anticipating indulging myself with some of this Peppermint roll.  It is morning and I am alive and here to enjoy it all.

Off to the airport to collect family back from London today and Naomi is home from Melbourne - a good day indeed.
