Here I am again - ALIVE AND WELL and spending a quiet weekend with a head all stuffed up, but apart from that I am well. I did have plans to do so much this weekend but it hasn't happened which doesn't really matter.
For those with a "sweet tooth" I found this recipe today:
Easy Caramel Fudge

Serves 40
125g butter
1½ cups Bundaberg rich brown sugar
2 tablespoons Bundaberg golden syrup
395g can condensed milk
180g white cooking chocolate, coarsely chopped
½ cup shelled, unsalted pistachio nuts (optional)
Line a 28cm x 18cm x 3cm pan with foil. Melt butter in a large saucepan. Add brown sugar, golden syrup and condensed milk; stir over a medium heat until boiling. Lower heat and cook, stirring for 10 minutes. Remove from heat and add chocolate; stir until smooth. The fudge will start to set quite quickly, so immediately stir in nuts and pour into prepared pan, then spread evenly with the back of a spoon. Allow to cool at room temperature for 30 minutes, then refrigerate until firm. Cut into small pieces.

I am certainly going to try this one. I guess you could change the type of nuts you use to those you really like.
It is a holiday here in Australia and it would be a good day to make something indulgent like this caramel fudge.
Inspiration for me today comes from watching a lovely spider on her dew covered web, constantly working away. She was wonderful and I spent a long time watching.
In the northern hemisphere the glory of the changing leaves and the vibrant colours always inspire me. Here in Australia the blossoms of spring have gone and I noticed some fruit set on the apricot tree at my daughter's home the other day. John was checking the fig tree too and I shall be eagerly awaiting the peaches of the summer season.
Those perennial things always inspire me - the constant rolling on of the seasons and the comfort it brings.
