Good Morning from a lovely Sunday morning in Adelaide.
I was inspired last night as I waited to be collected by a friend. I watched the birds flying all around almost busy getting ready for bed. One perched on the garden tap and almost asked for me to refill the bird bath with water (which I did). They were such happy and cheery little things and their flying skills had me in awe of them.
I had dinner with a group of friends and I am truly inspired by the strength of my women friends, their kindness and care for each other is wonderful to see and feel. It was great to chat and share things.
It was a late night and today I will most certainly be indulging myself with a slow, calm and quiet day - some television and some reading. The sewing room is going to have to wait a little longer while I gather strength (and the courage) to face the mess I have made. I know I am going to enjoy it when it is finished, but right now I am having a tired day and that room seems all too much, so closing the door on it for today. Doors are wonderful ! Why I wonder, does the mess spill over into other rooms?
Sharing a recipe today for one of my favourite muffins - steaming coffee and these on a cool/cold morning is wonderful.
Coffee and Hazelnut Muffins
Ingredients
2 cups SR Flour
1/3 cup brown sugar
1 cup roughly chopped hazelnuts
8 tsp instant coffee
1 tsp vanilla essence
1 egg, lightly beaten
1 cup milk
3 tablespoons of butter, melted
Preheat the oven to 200 C. Brush oil on the bottoms of 12 muffin tins.
Mix flour, hazelnuts and sugar in a bowl.
Use just enough boiling water to dissolve the coffee and mix it with the milk.
In another bowl mix the milk, egg, butter and vanilla.
Pour the egg mixture into the flour and fold in with a fork. Do not over mix.. it just has to be wet mostly through. This is the main secret to good muffins.
Spoon into muffin tins, filling each one about 2/3.
Bake for 15 - 20 mins or until just starting to brown and a skewer comes out clean.
