Hello from Adelaide - we have had a couple of very warm days and are now back to much cooler days and rain.

All is well in my little corner of the world - have finished for a while in my new "sewing/craft" room and boy am I tired from all the sorting and disposing of things we no longer need.  I guess the inspiration to get this done is because I want to sew and have somewhere where I can leave the machine and go back to it without having to pack up each time.  Don't go expecting wonderful creations - I will be doing lots of mending and plain and simple sewing - until I get back into the routine of things.  I have a lovely pattern for a sewn bag (what a surprise that I should like a bag) and hope to get started on that sometime soon.  Who knows what I will get done and when.

The Transplant Games have finished in Canberra and I received notification from one member that she is fundraising again now for the next games to be held in Sweden.  What inspiration is that.!!!

I am sharing a recipe for a chicken, broccoli and pasta dish.  Sounds yummy to me and I hope if you make it you will let me know how it turned out.









Chicken, broccoli and pasta bake









Serving size: Serves 4

Cuisine type: Traditional
Cooking time: Less than 60 minutes
Course: Main

INGREDIENTS

250g small rigatoni (or other short pasta)
2 cups (170g) small broccoli florets
3 cups (480g) shredded cooked chicken
½ cup (30g) semi-dried tomatoes, chopped coarsely
4 green onions (green shallots), chopped finely
250g light sour cream
½ cup (125ml) chicken stock
2 tablespoons wholegrain mustard
1 clove garlic, crushed
salt and freshly ground black pepper
½ cup (50g) grated mozzarella cheese
½ cup (40g) grated Parmesan cheese
METHOD

Preheat the oven to moderately hot (200°C/180°C fan-forced).

Cook the pasta in a large saucepan of boiling, salted water until just tender; drain.

Meanwhile, boil, steam or microwave broccoli until just tender.
Drain.

Combine pasta, broccoli, chicken, tomatoes and onions in a
large bowl.
Stir in combined cream, stock, mustard and garlic.
Season to taste with salt and pepper.

Pour pasta mixture into an ovenproof dish (1.5-litre/6-cup capacity).
Top with combined cheeses.
Bake in a moderately hot oven for about 20 minutes
or until browned.

Not suitable to freeze.
Suitable to microwave.


I hope you like this - I think I shall try it tomorrow for dinner.
  Well that's the intention anyway.

 I am going to indulge myself tomorrow with a much quieter day 
and spend some time on here and tidy up some files, write some letters 
and just get off my feet for a few hours.
Reading for a while sounds good to me too.
  Reading always brings pleasure 
and I always take a book with me to appointments 
as I very often have to wait a while. 
 I don't have any medical appointments this week which brings a smile
 - they start again next week though.

  Tidying this desk will be a great idea too - so that's my intention.
