Good Morning from a wet and windy and rather wild City of Adelaide.  The wind has howled and blown all night and it has rained on and off.  I know this because I didn't sleep very well at all.  Never mind.

My inspiration yesterday and today comes from the wonderful strength of the human spirit.  All of the miners are out and well and the rescuers are safe too - what a wonderful achievement.  I rejoice with their families and celebrate their lives.  I come from a family of coal and tin miners from both South and North Wales and know the anxious times families have. 

Listen to Rita McNeil with her "Working Man" and enjoy - I love this and often play it.


Time to indulge yourself with a lovely banana recipe this time.

Banana Slice



Ingredients 



1 cup self raising flour 
Pinch of salt 
1/4 teaspoon of bicarb soda 
1/4 cup of milk 
1 egg beaten 
1/2 teaspoon baking powder 
3/4 cup castor sugar 
60 grams butter 
1/3 cup mashed banana 
1/2 teaspoon cinnamon 
1/2 teaspoon of nutmeg 

Sift dry ingredients. Melt butter. Mix the egg, milk, butter and banana. Stir into the dry ingredients. Grease a lamington pan and bake for 25 - 30 minutes 
in a moderate oven. Ice when cold with lemon icing and sprinkle with cinnamon.

Lovely coffee and a slice of this - bliss.


It is Friday and that means the weekend - enjoy the anticipation of the things you are going to do and then enjoy doing them.  Make each day a special one  and find pleasure in the little things.
