Welcome to Sunday - late in the day on our first day of "summer time" - lighter evenings are nice.

I started the day with such enthusiasm and was going to achieve so much but that hasn't happened.  Not very much achieved today at all, but it is a calm and peaceful day.

A salad recipe to share today - one my girls really like ( I leave the bacon out for them though.

It is a nice salad though and the sunflower seeds add something special to it.




BROCCOLI CAULIFLOWER SALAD

1 bunch raw broccoli
2 c. cauliflower flowerets
1 c. sunflower seeds
1 lb. bacon, browned crisp
1/2 sweet onion or 1 sm. red onion
1 c. grated Cheddar cheese
1 c. Miracle Whip salad dressing
1/4 c. sugar
2 tbsp. vinegar


Wash broccoli and trim off heavy stalks. Use the tender flowerets for this salad. Wash cauliflower, trim, and use flowerets for salad. Cut red onion into thin slices and separate rings. Add sunflower seeds. Toss together. Add half of bacon. Add grated cheese.Stir salad dressing, sugar, and vinegar together until creamy; add to the vegetables. Stir well and top with remaining bacon, then refrigerate.

I am doing find - got a bit of a cold but other than that I am monitored often and medicated well and inspired by life itself and the wonders of modern surgery.


Indulging myself with a chicken casserole for dinner - it is smelling lovely and I am looking forward to it - then I shall be off to bed I think,  It will probably still be daylight but that's okay too.
